Steak recipes are available for all sorts of cuts of beef. If you’re on a budget or you’ve got a lot of mouths to feed, finding affordable cuts of meat and making the most of them are important to you.

There are a lot of traditionally less expensive cuts that you can do a lot with if you know what to look for. With the right recipe, these cuts can be every bit as mouth watering as a T-bone when cooked properly, and the money you’ll save making them an even more attractive buy.

Cube steak in salsa

Cube steak is definitely one of those underrated steaks you can do so much with that is always a great buy for the money. You can cook it on a stove top in a pan or in the oven and still be assured that it will come out fine. For smothered cube steak recipes, here’s one with a simple list of ingredients:

  • 1 lb of beef cube steak in palm-size pieces
  • 1 medium yellow onion, sliced
  • 1 small can diced green chilies
  • 1 large bell pepper, sliced
  • 16 oz of salsa, homemade or jarred
  • 1/2 tsp ground cumin
  • Shredded cheddar or jack cheese
  • Water
  • Salt and pepper

Preparation:

Salt and pepper both sides of cube steak and place in a 9 x 13 baking dish. Sprinkle on cumin and top with onion, bell pepper, and can of green chilies. Next, cover all ingredients with salsa. If your salsa is thick, you can add a small amount of water to the bottom of the pan to ensure there won’t be any burning.

Cover with aluminum foil and bake in a preheated oven at 375 degrees for 30 minutes. Remove from oven and carefully remove foil. Cover with shredded cheese, and serve with yellow rice and tortillas. Garnish with cilantro.

Grilled skirt steak

Skirt steak is another underrated cut of meat you can do a lot with. It’s usually affordable and is the mainstay of a lot of great steak recipes. For spicy skirt steak recipes on the grill, you’ll need the following:

  • 1 large skirt steak
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp dark chili powder
  • 1 tsp coriander
  • 1-1/2 tsps garlic powder

Preparation:

In a measuring cup, combine seasonings and mix thoroughly to create a rub. Sprinkle half the seasonings on one side of steak and rub in well. Flip steak over and repeat with remaining seasoning. Place in shallow baking dish, cover and refrigerate for at least an hour or more.

After preheating your grill to high, add skirt steak and cook 6 – 8 minutes per side, depending on your preference for doneness. Remove from heat and let set for 5 minutes before cutting. Serve with Pico de Gallo and your favorite sides.

More easy cube steak recipes prepared in minutes with minimal ingredients are as follows:

  • 1 lb cube steak in palm-size pieces
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 onion, diced
  • Flour
  • 1 tbsp olive oil
  • 1 cup water/milk

Preparation:

Heat oil in large skillet on medium heat. Combine seasonings, sprinkle on both sides of meat, then roll in flour. Add onions and meat to skillet and allow to brown on each side. Combine 1 – 2 tbsps of flour to water/milk and slowly add to skillet stirring frequently to make gravy. When gravy thickens, remove skillet from heat and serve with mashed potatoes and a fresh salad or corn.

Tomato twist: For a twist, brown steaks, add a 15 oz can of stewed tomatoes, and continue cooking as directed.
