Hummus in cucumber boats

A great, healthy snack options ideal for the back to school season.

INGREDIENTS:

1 14.5-ounce can cannellini beans

1 14.5-ounce can of chickpeas

3 cloves of garlic

1/3 cup tahini

1/4 cup lemon juice

2 teaspoons lemon juice

Salt and pepper to taste

2 long cucumbers

10 tortilla chips

Optional: Goldfish cheese crackers

PREPARATION:

Mix first 6 ingredients (cannellini beans, chickpeas, garlic, tahini, lemon juices) in a processor. Add salt and pepper to taste. If mixture gets too hard, add water little by little until it acquires the proper consistency. Peel the cucumbers. Cut them in half. Spoon out the seeds and discard them. Fill the little boats made from the peeled and scooped out cucumbers with a hummus. Decorate it with a tortilla.
