Choose a good recipe made with quality ingredients and pair it with a nice wine for a gourmet meal. Be prepared to spend time and money finding the necessary ingredients to create food that could only be found in a gourmet restaurant. Each of the recipes listed below are dinner items that feature a different protein, they each have a wine suggestion to complete the meal.
Ingredients
Slice Portobello mushrooms and cover in olive oil, salt, pepper and lime juice. Sauté mushrooms and onion and set aside. Separate the skin from the chicken meat by sliding your fingers under the skin layer. Stuff the mushrooms under the skin. Rub the chicken skin with olive oil, salt, pepper, oregano and thyme. Place in a roasting pan and surround with chunks of onion, cook for one hour at 375 F degrees. Chicken will be finished when the internal temperature reaches 165 F degrees. Cut chicken and serve with wild rice. This meal is best served with a chilled Pinot Noir wine.
Ingredients
In a bowl combine flour with a pinch of thyme, salt and pepper. Coat fish in flour and add to a hot sauté pan with olive oil. Brown on both sides and remove from pan. De-glaze pan with white wine and scrape up brown bits from pan. Once reduced add garlic, lemon juice and zest and remaining thyme. Add the catfish back in the pan and cook thoroughly. For a thicker sauce you can add a mixture of flour and butter. Serve over a light orzo coated with olive oil and desired seasonings. Pair this meal with a Pinot Grigio wine.
