To make a fish soup this easy, you’ll need to start by pouring your clam juice into a medium sauce pan and adding your large, diagonally cut carrot slices. While you’re simmering your carrots, take a large sauce pan or skillet and place on medium heat, and then add your olive oil. Once it’s started to warm up, add your onion slices and cook until soft and almost transparent in coloring. Next, add all of your seasonings and continue cooking for an additional 4 or 5 minutes. Once this is completed, stir in your tender carrots and clam juice and simmer for 5 more minutes. Now add your fish chunks and cilantro and reduce heat to medium/low and continue simmering for an additional 10 to 12 minutes or until the fish is the desired consistency. At this point, you can add more water or seasoning if you feel it needs it. Once it meets your approval, ladle into bowls, top with your cilantro sprigs, and serve.
